Ethiopian Yirgachefe – GM Light Medium Roast
Yirgachefe is the best coffee in the world, period.
You may be asking yourself how can this be, I’ll give you a quick explainer on why an how you need this coffee in your coffee-consuming repertoire.
In case you are not aware, Ethiopia is the birthplace of coffee, specifically arabica beans. The arabica plant is indigenous to both Ethiopia and more specifically, the Sidoma region in the south of the country and to drill down even more, the town of Yirgachefe. I bet you get it now…I knew you would.
The warm, tropical climate paired with healthy soils and its high elevation means that the coffee cherries take a long time to mature, allowing the plants and the beans to develop complex and deep flavor profiles. The great thing about yirga (besides being the birthplace of coffee) is there are many heirloom varietals available. While the rabbit hole here is deep, I’ll stick to the one we have chosen as our first GM co-release, its growing location, tasting notes and what to expect from a cup of this amazing brew.
